↪️1 lb (500g) bone-in pork chops (about ¾ to 1 inch thick)
↪️½ tbsp onion powder
↪️½ tbsp garlic powder
↪️½ tsp cayenne pepper
↪️1 tsp seasoning salt
↪️½ tsp freshly cracked black pepper
↪️2 tsp olive oil
↪️½ cup all-purpose flour (reserve extra after dredging)
↪️2 tbsp olive oil (for frying)
↪️1 tbsp unsalted butter
🔹️🔹️For the Gravy:
↪️1 tbsp unsalted butter
↪️1 large onion, thinly sliced
↪️Pinch of salt
↪️4 garlic cloves, minced
↪️1 tsp fresh chopped thyme (or ½ tsp dried thyme)
↪️½ cup chicken broth (divided)
↪️¾ cup buttermilk or heavy cream
↪️Fresh chopped parsley (for garnish)
👉Instructions:
✅️1. Prepare the Pork Chops:
◾️Pat pork chops dry with paper towels.
◾️Rub both sides with onion powder, garlic powder, cayenne, seasoning salt, black pepper, and olive oil.
◾️Dredge each chop in flour, shake off the excess. Keep the leftover flour for the gravy.
✅️2. Cook the Pork Chops:
◾️Heat 2 tbsp olive oil and 1 tbsp butter in a skillet over medium heat.
◾️Fry the chops until golden brown, about 3–4 minutes per side.
◾️Remove from skillet and keep warm.
✅️3. Make the Gravy:
◾️In the same pan, add 1 tbsp butter and the sliced onions with a pinch of salt.
◾️Cook for about 10 minutes, stirring occasionally, until onions are soft and caramelized.
◾️Add garlic and thyme; cook for 30 seconds until fragrant.
◾️Sprinkle in 2 tbsp of the leftover flour and stir for 2 minutes to cook it out.
◾️Pour in the chicken broth, scraping the pan to get all the flavor. Let it thicken slightly.
◾️Stir in buttermilk or heavy cream and simmer for 1–2 minutes until smooth and creamy.
✅️4. Finish the Dish:
◾️Return pork chops to the skillet and coat with gravy.
◾️Let them simmer for about 5 minutes until fully cooked and tender.
◾️If gravy gets too thick, add a splash of broth or cream.
✅️5. Serve:
◾️Taste and adjust seasoning if needed.
◾️Garnish with fresh parsley and serve hot.
