🥢 Mongolian Beef for Two

▶️ Ingredients
👉 Beef:
◾️ 8 oz flank steak (or skirt, hanger, or sirloin — thinly sliced)
◾️ 1½ Tbsp cornstarch
👉 Sauce:
◾️ 1 tsp sesame oil
◾️ 1 clove garlic, minced
◾️ ½ tsp minced ginger
◾️ 1 Tbsp brown sugar
◾️ 2½ Tbsp soy sauce
◾️ 2½ Tbsp water
👉 To Finish:
◾️ 3 Tbsp chopped green/spring onion
👉 Optional Sides:
◾️ Steamed rice
◾️ Steamed or stir-fried vegetables (broccoli, snap peas, or carrots)
▶️ Instructions
🔹 Step 1: Prep the Beef
✅️ Thinly slice the steak against the grain.
✅️ Toss slices with 1½ Tbsp cornstarch until evenly coated.
🔹 Step 2: Assemble in Slow Cooker
✅️ Place coated beef into a small slow cooker (fits 8 oz of meat).
🔹 Step 3: Mix the Sauce
✅️ In a bowl, whisk together sesame oil, garlic, ginger, brown sugar, soy sauce, and water.
✅️ Pour sauce over the beef and stir gently to coat.
🔹 Step 4: Cook
✅️ Cook on High for 1½–2½ hours or Low for 3–4 hours, until beef is tender and flavorful.
🔹 Step 5: Finish
✅️ Stir in chopped green onions just before serving.
🔹 Step 6: Serve
✅️ Serve over steamed rice with your favorite vegetable side.
💡 Tips:
◾️ Add a dash of hoisin sauce or red pepper flakes for extra flavor.
◾️ To thicken the sauce, cook uncovered for 10–15 minutes or stir in ½ tsp cornstarch + 1 tsp water.
