🍗 Slow Cooker Chicken and Potatoes 🥔
📝 Ingredients:
🔸️4 boneless, skinless chicken thighs or breasts
🔸️1 ½ pounds baby potatoes, halved
🔸️1 small onion, sliced
🔸️3 garlic cloves, minced
🔸️2 tablespoons olive oil
🔸️1 teaspoon salt
🔸️½ teaspoon black pepper
🔸️½ teaspoon paprika
🔸️½ teaspoon dried thyme
🔸️½ teaspoon dried rosemary
🔸️½ cup low-sodium chicken broth
🔸️(Optional) 1 tablespoon lemon juice
🔸️Fresh chopped parsley for garnish
👉Instructions:
✅️1. Season the veggies:
In a large bowl, toss the baby potatoes, sliced onion, and minced garlic with olive oil, salt, pepper, paprika, thyme, and rosemary.
✅️2. Layer in the slow cooker:
Add the seasoned potatoes and onions to the bottom of a 6-quart slow cooker. Place the chicken on top. Pour chicken broth evenly over everything. Add lemon juice if using.
✅️3. Cook:
Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is fully cooked and potatoes are tender.
✅️4. Optional – Broil for a golden finish:
Transfer the chicken and potatoes to a baking sheet and broil for 3–5 minutes for a crispy top. Watch carefully so it doesn’t burn.
✅️5. Serve and enjoy:
Garnish with fresh parsley and serve hot. Great with a green salad or warm crusty bread on the side.
👉 3 Tips for Best Results:
↪️1. Cut potatoes evenly so they cook at the same rate.
↪️2. Avoid opening the lid while cooking—it releases heat and slows things down.
↪️3. Taste before serving—a little extra lemon juice or salt can brighten it up perfectly.
