🌿 Moroccan Chicken Tagine with Olives & Preserved Lemon 🍋🍗
👉Ingredients:
🔹️1 whole chicken, cut into pieces
🔹️2 medium onions, finely chopped
🔹️3 garlic cloves, minced
🔹️3 tablespoons olive oil
🔹️1/2 cup water
🔹️3.5 oz (about 1/2 cup) green olives, pitted
🔹️1 preserved lemon, sliced
🔹️1 teaspoon ground ginger
🔹️1/2 teaspoon turmeric
🔹️Salt and black pepper to taste
🔹️A handful of chopped cilantro and parsley
👉Instructions:
✅️1. In a large pot or tagine over medium heat, add the olive oil, chopped onions, and garlic. Sauté until soft.
✅️2. Add the chicken pieces and season with ginger, turmeric, salt, and pepper. Stir well and cook until the chicken starts to brown slightly.
✅️3. Pour in the water, cover, and let it simmer for about 30 minutes.
✅️4. Add the green olives and slices of preserved lemon. Let everything cook uncovered until the sauce thickens a bit.
✅️5. Sprinkle with chopped parsley and cilantro before serving.
👉 3 Tips for the Best Tagine:
🔸️1. Milder olives: If your olives are too salty, soak them in warm water or boil them for a couple of minutes before adding.
🔸️2. Lemon balance: Preserved lemon is strong! Just a few slices are enough to give that unique Moroccan flavor without overpowering the dish.
🔸️3. Golden flavor: Browning the chicken at the start brings out a deeper, richer taste in the sauce.
Enjoy with warm bread or fluffy couscous!
