🛒 Ingredients:
◾️ 3–4 lb chuck roast
◾️ 1 tbsp olive oil
◾️ Salt & black pepper, to taste
◾️ 1 packet onion soup mix (or 1 tbsp dried onion + bouillon)
◾️ 3 cups beef broth
◾️ 1 tbsp Worcestershire sauce
◾️ 1 tsp garlic powder
◾️ 1 lb baby potatoes, halved
◾️ 3 cups baby carrots
◾️ 1 medium onion, diced
◾️ 2 tbsp cornstarch + 2 tbsp water (optional, for gravy)
👨🍳 Directions:
🔹 1. Sear the Meat
Season roast with salt & pepper. Heat olive oil in a skillet and sear the roast on all sides until nicely browned.
🔹 2. Layer in the Crockpot
Place the roast in the slow cooker. Add potatoes, carrots, and diced onion around the meat.
🔹 3. Pour the Good Stuff
In a bowl, mix together beef broth, onion soup mix, Worcestershire sauce, and garlic powder. Pour over the meat and veggies.
🔹 4. Slow Cook
Cover and cook:
▶️ LOW for 8–10 hours
▶️ HIGH for 4–5 hours
Cook until the beef is super tender and easily pulls apart.
🔹 5. Make Gravy (Optional)
Remove the roast and vegetables. In a small bowl, whisk together cornstarch and water. Stir into the cooking juices and cook on HIGH for 10 minutes until thickened.
🔹 6. Serve & Enjoy
Slice or shred the beef, spoon gravy over everything, and serve warm with the potatoes and carrots. 😋
