🥩 Classic Beef Pot Roast 🍲
A comforting, hearty dish with juicy beef, tender veggies, and rich flavors—perfect for family dinners or Sunday gatherings.
◾️ Ingredients:
👉 3–4 lb beef chuck roast
👉 1 tbsp olive oil
👉 1 onion, chopped
👉 3 cloves garlic, minced
👉 3 carrots, cut into chunks
👉 3 potatoes, cut into large chunks
👉 2 cups beef broth
👉 1 cup red wine (optional, or replace with broth)
👉 2 sprigs fresh thyme (or 1 tsp dried)
👉 2 sprigs fresh rosemary (or 1 tsp dried)
👉 Salt & black pepper, to taste
◾️ Instructions:
▶️ Prepare the Beef: Pat roast dry, season with salt & black pepper.
▶️ Sear the Meat: Heat oil in Dutch oven, sear beef on all sides (4–5 min each). Remove & set aside.
▶️ Cook Aromatics: Add onion & garlic to pot, sauté 2–3 min until fragrant.
▶️ Deglaze: Pour in red wine (or broth), scrape up browned bits for flavor.
▶️ Add Veggies & Herbs: Place carrots & potatoes around beef. Add thyme & rosemary.
▶️ Slow Cook: Pour in broth until beef is halfway covered. Simmer & cover. Cook 3–4 hrs (or slow cooker: LOW 8 hrs / HIGH 4–5 hrs).
▶️ Serve: Slice or shred beef. Serve with veggies & pan juices as gravy.
