Slow Cooker Christmas Cake

🎄 4-Ingredient Christmas Cake


Ingredients:

➡️ 300g (10.5 oz) mixed dried fruit

➡️ 250g (1 cup) butter, softened

➡️ 250g (1 cup) brown sugar

➡️ 4 large eggs


Optional: 1 tsp cinnamon or mixed spice for extra flavor


👉Instructions:

1. 🔹️ Preheat your oven to 150°C (300°F) or set your slow cooker on low.


2. 🔹️ In a large bowl, cream the butter and sugar together until light and fluffy.


3. 🔹️ Beat in the eggs one at a time.


4. 🔹️ Fold in the mixed dried fruit (and optional spices if using).


5. 🔹️ Pour the mixture into a greased cake tin that fits your slow cooker or oven.


6. 🔹️ Bake in the oven for 1.5–2 hours, or in the slow cooker on low all day (about 6–8 hours).


7. 🔹️ Check the cake is done by inserting a skewer in the center – it should come out clean.


8. 🔹️ Let the cake cool completely before serving.


👉 Tips:

✅️1. Soak the fruit overnight in a little juice, rum, or brandy for a juicier, richer flavor.

✅️2. Line your cake tin with parchment paper to prevent sticking.

✅️3. Add spices like cinnamon, nutmeg, or mixed spice for a more festive aroma.
