Slow Simmered Beef & Potato Casserole with Southern Flavors

 


🍲 Southern Smothered Beef & Potato Casserole


✅ Comfort food at its best! Tender beef, hearty potatoes, and rich Southern flavors all come together in this one-pot casserole.


🔹 Ingredients:

◾️ 2 pounds beef chuck, cut into 1-inch cubes

◾️ 2 tablespoons all-purpose flour

◾️ 1 teaspoon smoked paprika

◾️ 1/2 teaspoon garlic powder

◾️ 1/4 teaspoon cayenne pepper (optional)

◾️ Salt & black pepper, to taste

◾️ 3 tablespoons vegetable oil

◾️ 1 large yellow onion, chopped

◾️ 2 cloves garlic, minced

◾️ 4 cups beef broth

◾️ 1 (14.5 oz) can diced tomatoes, undrained

◾️ 2 tablespoons tomato paste

◾️ 1 tablespoon Worcestershire sauce

◾️ 2 pounds Yukon Gold potatoes, peeled & cubed

◾️ 1 cup frozen green beans

◾️ 1/4 cup fresh parsley, chopped (for garnish)


▶️ Instructions:

1. 👉 In a bowl, mix flour, paprika, garlic powder, cayenne, salt & pepper. Toss beef cubes to coat. (10 min)


2. 👉 Heat oil in a Dutch oven. Brown beef in batches, don’t overcrowd. Remove & set aside. (20 min)


3. 👉 Add onion, cook until soft (5–7 min). Stir in garlic for 1 min. (8 min)


4. 👉 Pour in broth, scraping browned bits. Add tomatoes, tomato paste & Worcestershire. Simmer. (5 min)


5. 👉 Return beef to pot. Add potatoes. Cover & cook on low until beef & potatoes are tender. (1 hr 30 min)


6. 👉 Stir in green beans during last 15 min. (15 min)


7. 👉 Let rest 10 min before serving. Garnish with parsley. (10 min)


💡 Pro Tip: For maximum flavor, sear beef until it develops a deep brown crust before simmering.
