Authentic Jamaican Curry Chicken

🍛 Authentic Jamaican Curry Chicken 🇯🇲 – A Taste of the Islands.

▶️Bold, comforting, and full of flavor—this curry chicken is the real deal! Tender chicken, creamy coconut milk, and island spices come together in one unforgettable dish.

👉You’ll need:

🔸️4 tbsp curry powder

🔸️2 tsp turmeric

🔸️2 tsp garlic powder

🔸️1 tsp ground mustard

🔸️1 tsp allspice

🔸️½ tsp black pepper

🔸️¼ tsp cayenne

🔸️2 lbs boneless chicken breasts (halved)

🔸️2 tsp sea salt

🔸️1 tbsp olive oil

🔸️2 tbsp butter

🔸️1 yellow onion, diced

🔸️2 red bell peppers, diced

🔸️1 jalapeño, minced

🔸️1½ tsp fresh ginger

🔸️1 can (15 oz) full-fat coconut milk

🔸️½ cup chicken stock

🔸️1 tbsp Worcestershire sauce

🔸️4 medium potatoes, cubed

😍Let’s cook:

1️⃣ Spice Mix: Combine all the spices in a bowl—this blend is where the magic starts.

2️⃣ Season & Brown: Salt the chicken and sear it quickly on both sides. Set aside.

3️⃣ Aromatics: Sauté onion, peppers, jalapeño, and ginger in butter until fragrant.

4️⃣ Toast the Spices: Add your spice mix and stir for 2 minutes to release flavor.

5️⃣ Make it Saucy: Pour in coconut milk, chicken stock, and Worcestershire. Stir well.

6️⃣ Simmer Time: Return chicken and add potatoes. Simmer everything gently.

7️⃣ Let it Cook: Cover and simmer for 30–40 minutes until tender and flavorful.

8️⃣ Dish it Out: Rest for a few minutes, then serve with jasmine rice or plantains!

👉3 quick tips to make your Jamaican Curry Chicken even better:

▶️1. Toast the curry powder first – Before adding it to the dish, toast it in a dry pan for 1–2 minutes. It brings out deeper, richer flavor.

▶️2. Use dark meat for more flavor – While chicken breast works well, using chicken thighs makes the dish juicier and more traditional.

▶️3. Let it sit before serving – After cooking, let the curry rest for 5–10 minutes. This allows the flavors to settle and deepen beautifully.
