Lamb Stew with Dumplings

🔸️Lamb Stew with Dumplings – A Hug in a Bowl

◾️On those chilly days when all you want is comfort food that warms you from the inside out, this lamb stew with dumplings hits the spot. Rich, hearty, and full of flavor, it’s the perfect slow-cooked dish to bring everyone to the table. Serve it with your favorite veggies or mashed potatoes and Yorkshire puddings for a complete, soul-soothing meal.

👉Ingredients:

◾️800g diced lamb

◾️2 large leeks (cut lengthwise, then sliced – include the dark green tops!)

◾️5 large carrots, sliced

◾️2 lamb Oxo cubes

◾️1 beef Oxo cube

◾️1 vegetable Oxo cube

◾️Hot water (just enough to cover the meat and veg)

◾️1 tsp wholegrain mustard (optional)

◾️Dried rosemary (a light sprinkle)

◾️Ground black pepper to taste

◾️Dumpling mix (such as Asda brand – make 5 dumplings)

◾️Bisto gravy granules (or similar, to thicken)

👉Instructions:

↪️1. Place the lamb, leeks, and carrots into your slow cooker.

↪️2. Dissolve the Oxo cubes in hot water and pour over the meat and vegetables.

↪️3. Add mustard (if using), rosemary, and black pepper. Stir gently.

↪️4. Cover with the lid (no tea towel needed) and cook on high for 3 hours.

↪️5. Mix your dumplings according to package instructions and place gently on top of the stew. Cook for another 1–1.5 hours.

↪️6. Remove dumplings and keep warm in the oven (especially if it's already on for Yorkshire puddings).

↪️7. Thicken the stew with Bisto gravy granules, stir well, and serve.

👉5 Tips for the Perfect Stew:

✅️1. Use the dark green leek tops – they’re full of flavor and often overlooked.

✅️2. Don’t overfill with water – just cover the ingredients for a rich gravy.

✅️3. Cook dumplings gently – placing them on top lets them steam perfectly.

✅️4. Remove dumplings before thickening – keeps them fluffy, not soggy.

✅️5. Add extra veg on the side – steamed cabbage, parsnips, or turnips make a great pairing.

👉Conclusion:

◾️This slow-cooked lamb stew with dumplings is more than just a meal—it’s warmth, comfort, and home in every bite. Whether you’re sharing with family or saving leftovers for later, it’s a dish that always satisfies. Enjoy!
