🧂 Ingredients:
◾️4 salmon fillets
◾️2 tbsp olive oil
◾️Salt & pepper to taste
◾️1 onion, finely chopped
◾️3 cloves garlic, minced
◾️1 cup heavy cream
◾️½ cup chicken broth
◾️½ cup grated Parmesan cheese
◾️4 cups fresh spinach
◾️1 cup sliced mushrooms
◾️¼ tsp ground nutmeg
◾️Juice of 1 lemon
👨🍳 Instructions:
↪️1. Prep the salmon:
Preheat oven to 375°F (190°C). Season salmon with salt and pepper.
↪️2. Sear the salmon:
In a large ovenproof skillet, heat olive oil over medium-high heat.
Sear salmon skin-side up for 2–3 minutes per side, until golden. Remove and set aside.
↪️3. Build the sauce:
In the same skillet, sauté onion and garlic for 2–3 minutes.
Add mushrooms and cook for another 3–4 minutes until softened.
↪️4. Simmer the cream:
Pour in heavy cream and chicken broth. Stir and bring to a simmer.
Cook for 5 minutes until slightly thickened.
↪️5. Add flavor:
Stir in Parmesan, nutmeg, and lemon juice. Add spinach and cook for 2 minutes, until wilted.
↪️6. Finish in the oven:
Return salmon to the skillet, spoon sauce over the top.
Transfer to oven and bake for 10–12 minutes, or until salmon is cooked through and sauce is bubbling.
🍽️ To Serve:
Serve hot with a side of garlic mashed potatoes, steamed rice, or crusty bread to soak up the creamy sauce. Top with extra Parmesan if desired.
