🔥 Cajun Chicken & Gravy

🛒 Ingredients:
🔸️3 boneless, skinless chicken breasts
🔸️½ yellow onion, sliced
🔸️2 bell peppers (any color), sliced
🔸️1 celery stalk, diced
🔸️4 tbsp butter
🔸️2 tsp olive oil
🔸️2 tsp onion powder
🔸️2 tsp garlic powder
🔸️1 tsp paprika
🔸️2 tsp Cajun seasoning
🔸️¼ cup all-purpose flour
🔸️2 cups chicken broth
🔸️1 tsp chicken bouillon powder
🔸️Extra Cajun seasoning (optional, for extra heat)

▶️1. Season the Chicken:
Rub 1 tsp olive oil over chicken breasts. Season both sides with onion powder, garlic powder, Cajun seasoning, and paprika.
▶️2. Sear the Chicken:
Heat a large skillet over medium-high heat. Add the remaining olive oil and cook chicken for 3–4 minutes per side, or until golden and fully cooked (165°F / 74°C). Remove and set aside.
▶️3. Sauté the Veggies:
In the same skillet, add butter. Toss in sliced bell peppers, onion, and celery. Cook until soft and slightly browned on the edges.
▶️4. Make the Roux:
Sprinkle in flour and stir continuously for 2–3 minutes to create a golden roux (this thickens the sauce).
▶️5. Build the Gravy:
Slowly pour in chicken broth, whisking constantly. Add bouillon powder and a pinch of extra Cajun seasoning if you want more heat. Stir until smooth and slightly thickened.
▶️6. Bring It Together:
Shred or slice the cooked chicken, then stir it back into the pan. Let it simmer for a few minutes to soak up the gravy.
