🥣 Beef Barley Soup
🍲 A hearty, cozy soup packed with tender beef, barley, and veggies – perfect for a filling meal!
⭐ Ingredients
🔹 1 lb beef stew meat, diced
🔹 1 tbsp olive oil
🔹 1 onion, diced
🔹 3 carrots, diced
🔹 2 celery stalks, diced
🔹 3 cloves garlic, minced
🔹 6 cups beef broth
🔹 3/4 cup barley
🔹 2 bay leaves
🔹 Salt & black pepper, to taste
🔹 Fresh parsley, chopped (for garnish)
👩🍳 Directions
👉 Brown the Beef: Heat olive oil in a large pot. Add beef and cook until browned. Remove & set aside.
👉 Sauté Veggies: Add onion, carrots, celery & garlic. Cook 5 minutes until softened.
👉 Simmer the Soup: Return beef. Add broth, barley & bay leaves. Bring to boil ➡️ simmer 45–60 minutes.
👉 Serve & Enjoy: Season with salt & pepper. Garnish with parsley 🌿.
