Balsamic Mozzarella Baked Chicken Breasts
👉Ingredients:
▶️4 boneless, skinless chicken breasts
▶️1 tablespoon olive oil
▶️2 teaspoons Italian seasoning
▶️Salt and black pepper, to taste
▶️1 cup cherry tomatoes, halved
▶️1 cup shredded mozzarella cheese
▶️2 tablespoons balsamic vinegar
▶️1 tablespoon honey
▶️2 garlic cloves, minced
▶️Fresh basil leaves, for garnish (optional)
👉Instructions:
✅️1. Preheat the Oven:
◾️Set your oven to 400°F (200°C). Lightly grease a baking dish.
✅️2. Season the Chicken:
◾️Rub the chicken breasts with olive oil, Italian seasoning, salt, and pepper. Place them in the prepared baking dish.
✅️3. Make the Balsamic Glaze:
◾️In a small bowl, mix the balsamic vinegar, honey, and minced garlic.
✅️4. Assemble the Dish:
◾️Scatter the halved cherry tomatoes around the chicken. Pour the balsamic glaze evenly over everything.
✅️5. Bake:
◾️Place the dish in the oven and bake uncovered for 20–25 minutes, or until the chicken reaches about 160°F (71°C).
✅️6. Add the Cheese:
◾️Sprinkle mozzarella over each chicken breast. Return to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and the chicken is fully cooked (165°F/74°C).
✅️7. Serve:
◾️Garnish with fresh basil and a little extra balsamic if desired. Serve warm with your favorite roasted vegetables or a fresh green salad.
