❤️Alternate Version: 20-Minute Skillet Mushroom Chicken
👉Ingredients:
🔸️1½ lb boneless, skinless chicken breasts
🔸️Salt and black pepper, to taste
🔸️1 tsp dried oregano
🔸️1 tsp paprika
🔸️1 tsp ground coriander
🔸️2 tbsp extra virgin olive oil
🔸️12 oz fresh mushrooms, sliced
🔸️½ cup chicken broth
🔸️1 tbsp ghee or unsalted butter
🔸️3 green onions, chopped
🔸️2 garlic cloves, minced
🔸️Fresh parsley for garnish (optional)
👉Instructions:
✅️1. Preheat your oven to 200°F to keep the chicken warm.
✅️2. Slice chicken breasts horizontally to create thin cutlets. Season them on both sides with salt, pepper, oregano, paprika, and coriander.
✅️3. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 3–4 minutes per side, or until nicely browned and cooked through.
✅️4. Remove the chicken from the skillet and place in the warm oven.
✅️5. In the same pan, add butter and sauté mushrooms for 5 minutes or until softened. Stir in the garlic and green onions, then pour in the chicken broth. Season with a bit more salt and pepper.
✅️6. Let the sauce simmer and scrape the bottom of the skillet to deglaze and incorporate all the flavor.
✅️7. Return the chicken to the skillet, spooning the sauce over the top.
✅️8. Garnish with parsley if desired and serve hot.
