Lamb Chops Roasted with Potatoes & Onions – A Delicious One-Pan Meal
👉Ingredients:
↪️8 lamb chops
↪️1.5 lbs baby potatoes, halved
↪️2 large red onions, sliced
↪️4 garlic cloves, minced
↪️2 tbsp fresh rosemary, chopped
↪️2 tbsp fresh thyme leaves
↪️1 tsp paprika
↪️1 tsp ground black pepper
↪️2 tsp sea salt
↪️4 tbsp olive oil
↪️Juice of 1 lemon
↪️1 tbsp Dijon mustard
👉Instructions:
✅️1. Preheat oven to 400°F (200°C).
✅️2. In a mixing bowl, whisk together olive oil, lemon juice, garlic, mustard, rosemary, thyme, paprika, salt, and pepper to make the marinade.
✅️3. Add lamb chops to the marinade and coat thoroughly. Let sit for 30 minutes (or up to 2 hours).
✅️4. On a large baking sheet, toss halved baby potatoes and onion slices with a little olive oil, salt, and pepper.
✅️5. Roast the vegetables for 20 minutes.
✅️6. Remove the pan, push veggies to the sides, and place the marinated lamb chops in the center.
✅️7. Return to oven and roast for another 15–18 minutes, flipping chops halfway.
✅️8. For a crispier finish, broil the pan for the last 2 minutes.
✅️9. Let the lamb rest for 5 minutes before serving with the roasted veggies.
