Bœuf Bourguignon 🍷🥩
👉INGREDIENTS:
• 1.5 kg (3.3 lbs) beef (chuck or beef cheek), cut into large cubes
• 200 g (7 oz) smoked bacon or pancetta, diced
• 500 g (1.1 lbs) pearl onions
• 500 g (1.1 lbs) button mushrooms
• 2 carrots, sliced
• 2 garlic cloves, minced
• 1 bottle of red wine (preferably Burgundy)
• 2 tablespoons flour
• 2 tablespoons olive oil
• 1 bouquet garni (thyme, bay leaf, parsley tied together)
• Salt and pepper, to taste
👉INSTRUCTIONS:
✅️1. In a large Dutch oven or heavy pot, brown the bacon in a bit of olive oil. Remove and set aside.
✅️2. In the same pot, sear the beef cubes over high heat until browned on all sides. Sprinkle with flour and stir well.
✅️3. Add the carrots, garlic, and pearl onions. Mix everything together.
✅️4. Pour in the red wine and add the bouquet garni. Season with salt and pepper.
✅️5. Cover and let simmer on low heat for 3 hours.
✅️6. Add the mushrooms and reserved bacon. Let cook for an additional 30 minutes.
✅️7. Serve hot with boiled potatoes or fresh pasta.
