◾️Cajun Chicken with Creamy Parmesan Linguine


👉Ingredients:


🚨For the Cajun Chicken:

🔹️4 boneless, skinless chicken breasts (about 6 oz each)

🔹️2 tablespoons Cajun seasoning

🔹️1 tablespoon olive oil

🔹️1 tablespoon butter

🔹️1/2 cup chicken broth

🔹️1/4 cup heavy cream

🔹️1 tablespoon chopped fresh parsley (for garnish)



🚨For the Creamy Parmesan Linguine:

🔹️1 pound (lb) linguine pasta

🔹️4 tablespoons butter

🔹️2 garlic cloves, minced

🔹️1 cup heavy cream

🔹️1/2 cup grated Parmesan cheese (plus extra for topping)

🔹️1/4 cup reserved pasta water

🔹️1/4 teaspoon salt

🔹️1/4 teaspoon black pepper

🔹️1/4 cup chopped fresh basil (for garnish)


👉Instructions:

✅️1. Cook the Pasta:

◾️Boil a large pot of salted water. Cook the linguine until al dente, following package directions. Reserve 1/4 cup of the pasta water before draining. Set the pasta aside.


✅️2. Season the Chicken:

Pat the chicken dry with paper towels. Rub both sides generously with Cajun seasoning.


✅️3. Cook the Chicken:

In a large skillet over medium-high heat, heat olive oil and butter. Add the chicken breasts and cook 5–7 minutes per side, or until golden and cooked through (internal temp 165°F). Remove from skillet and let rest.


✅️4. Make the Cajun Sauce:

Lower the heat to medium. Pour in chicken broth and heavy cream. Scrape up the browned bits from the pan and simmer for 3–4 minutes until slightly thickened. Remove from heat.


✅️5. Make the Parmesan Sauce:

In a separate skillet or pot, melt butter over medium heat. Add garlic and sauté for 1 minute. Pour in heavy cream and bring to a light simmer. Add Parmesan cheese, stirring until smooth. Season with salt and pepper.


✅️6. Combine the Pasta:

Add the cooked linguine to the Parmesan sauce and toss well to coat. Add some reserved pasta water if the sauce is too thick.


✅️7. Serve:

Slice the rested Cajun chicken and serve it on top of the creamy pasta. Garnish with fresh parsley, basil, and more Parmesan if desired.
