▶️2 lbs beef chuck roast
▶️1 tbsp olive oil
▶️1 onion, chopped
▶️2 carrots, chopped
▶️2 celery stalks, chopped
▶️3 garlic cloves, minced
▶️2 cups beef broth
▶️1 (14 oz) can crushed tomatoes
▶️1 tsp dried rosemary
▶️1 tsp dried thyme
▶️Salt & pepper to taste
▶️2 tbsp chopped fresh parsley (for garnish)

✅️1. Heat olive oil in a large pot over medium-high. Season beef with salt and pepper, then sear until browned all over.
