👉Ingredients:
↪️6 cups grated carrots
↪️1 cup brown sugar
↪️1 cup raisins
↪️4 eggs
↪️1 1/2 cups white sugar
↪️1 cup vegetable oil
↪️2 teaspoons vanilla extract
↪️1 cup crushed pineapple (well drained)
↪️3 cups all-purpose flour
↪️1 1/2 teaspoons baking soda
↪️1 teaspoon salt
↪️4 teaspoons ground cinnamon
↪️1 cup chopped walnuts
👉Instructions:
✅️1. In a medium-sized bowl, mix the grated carrots with the brown sugar. Let it sit for about 1 hour, then add in the raisins.
✅️2. Preheat your oven to 350°F (175°C). Grease and flour two 10-inch round cake pans.
✅️3. In a large mixing bowl, beat the eggs until fluffy. Slowly mix in the white sugar, vegetable oil, and vanilla extract. Stir in the drained crushed pineapple.
✅️4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
✅️5. Fold in the carrot-raisin mixture along with the chopped walnuts.
✅️6. Divide the batter evenly between the prepared cake pans.
✅️7. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
✅️8. Once completely cooled, frost with your favorite cream cheese frosting.
